A propos de cette visite

From Shiraz to Tehran – Hands-on Food & Dessert Experience

This 14-day culinary program is designed as a regional tasting route across Iran, connecting the country’s most distinctive food cultures from the southern coasts to the Caspian north, the desert cities, and the capital. It combines hands-on cooking sessions, local kitchen visits, market walks, orchard visits, and traditional cafés, offering a structured introduction to Persian stews, rice techniques, breads, desserts, and regional ingredients.

The journey begins in Shiraz with classic Fars flavors such as faludeh, sholeh zard, and kalam polo, where participants learn about herb combinations, rosewater, saffron infusion, and syrup techniques. In Bushehr, the focus shifts to southern coastal cuisine with ghalieh mahi and date-based sauces. The northern provinces of Gilan and Mazandaran introduce smoked eggplant dishes, fava bean stews, sour kebabs, fresh dairy, and the role of local herbs in Caspian cooking.

Central Iran highlights heritage recipes such as Isfahani beryani and gaz, followed by Yazd’s pastry traditions including qottab and pashmak. In Kerman and Tabriz, participants explore nut orchards, cumin rice, kolompeh pastry, and the preparation of koofteh Tabrizi. Tehran brings together traditional ice cream, kaleh pacheh, bread baking workshops (sangak and taftoon), and a grand finale featuring dizi, gheimeh, gormeh sabzi, and regional sweets.

Throughout the program, guests actively prepare stews, rice dishes, kebabs, desserts, and breads under local guidance. Market visits focus on spices, honey, dairy, nuts, and herbs, providing practical knowledge about ingredient selection and regional variations. Tea pairings, syrup preparation, and dessert techniques are integrated into multiple sessions.

This tour is suitable for food enthusiasts, culinary professionals, and cultural travelers seeking structured, practical exposure to Iranian regional cuisine with consistent hands-on participation and guided tastings across 14 diverse cities and food traditions.
