The journey begins in Shiraz with classic Fars flavors such as faludeh, sholeh zard, and kalam polo, where participants learn about herb combinations, rosewater, saffron infusion, and syrup techniques. In Bushehr, the focus shifts to southern coastal cuisine with ghalieh mahi and date-based sauces. The northern provinces of Gilan and Mazandaran introduce smoked eggplant dishes, fava bean stews, sour kebabs, fresh dairy, and the role of local herbs in Caspian cooking.
